Meet Jane Wilson

This month we are enjoying having Jane Wilson from Blue Ridge Chocolates of Jonesboro, Tennessee in the Bistro La Belle Market + Cafe kitchen.  Carla and I are learning about chocolate and producing some tasty and artistic treats.  We are using organic and unprocessed ingredients as much as possible in our small batch recipes, and are so pleased with our results. We watched Jane as she showed us the process of making 3 different varieties of biscotti:  organic orange peel/ginger with golden raisins, chocolate with walnut, and cranberry almond. We have shortbread cookies, hand colored and embellished with chocolate bunnies, frogs and turtles.  Pretzel rods, with handmade caramel and coated with chocolate and candies.  Little chocolate bird nests, with several "eggs", and two sizes of "bunnies on the half shell", a wonderful Easter treat- filled with up to 40 miniature chocolate rabbits!  We are making plans for the upcoming racing season and have visions of rosebuds and horseshoes working their way into the design! This has been a wonderful way to work through an otherwise dreary winter month, with the fragrance of chocolate wafting through the kitchen has put us all in a wonderful mood--- Laura

For the kid at heart:    
peanut butter or Nutella hazelnut spread, on housemade bread with local strawberry jam, grape jelly, sliced banana, or local honey $5

housemade honey wheat or oat (white)
made with "shared" sourdough starter...
